- The purpose of this market is to build and exploit-mainting a departmental vegetable. This vegetables will allow the production of different ranges of vegetable products. The vegetable sector aims to serve and support in particular the department, the municipalities and EPCI inThe main objective of strengthening and promoting the use of local fruits and vegetables in collective meals served for adhering structures. The creation of an Essonnian vegetable sector therefore meets five major objectives: - Ensure the supply of quality products: o OfferFresh products, locally processed for collective catering. O Respect for the objectives of the Egalim law (50 % of quality products, including 20 % organic). - Support for local farmers: o Diversification of Essonnian agricultural productions. O Guarantee of a durable local outlet with afair remuneration. - Maximize food autonomy: o Strengthen short circuits for local agriculture. - Reduction of the carbon footprint: o Local supply and reduction in transport. - Economy and attractiveness: o contribute to local economic development andto the agricultural model resilient. The school catering of Essonnian colleges will be the first beneficiary of vegetables and fruits from vegetables, as well as the collective catering of adhering structures.
